Sichuan Delicacy: Mother’s Pig’s Trotter Recipe

Ingredients for Mother’s Pig’s Trotter: 1 pig’s trotter, 1 spring onion, 1 bunch of green onions, 50g white kidney beans, 2 star anise, salt to taste, 1 small piece of ginger, and an appropriate amount of cooking wine.
Method: Step 1: Prepare the ingredients; soak the white kidney beans overnight in cold water. Step 2: Scorch the pig’s trotter to remove hair, clean thoroughly, and chop into small pieces (the market vendor can do this for you). Add water to a pot, pour in some cooking wine, and add spring onion leaves and a slice of ginger. Place the pig’s trotter in cold water and bring to a boil over high heat.


Step 3: After the water boils, turn to medium heat and simmer for 15 minutes to fully cook out the blood. Step 4: Boil a pot of water and replace the water used for cooking the pig’s trotter. Add spring onion sections, star anise, 1 teaspoon of cooking wine, ginger slices, and soaked white kidney beans. Bring to a boil over high heat, then turn to medium heat, cover, and simmer for 40 minutes.


Step 5: After 40 minutes, the soup should turn into a milky white color, then turn off the heat. Step 6: Preheat the thermos with boiling water, cover, shake for two minutes, and pour out the water. Step 7: Place the cooked pig’s trotter and white kidney beans into the thermos, and pour in the boiling soup. Step 8: I used two thermoses for slow cooking, covered, and let it slow cook for more than 5 hours.


You can rest or sleep, and wake up to a nourishing pig’s trotter soup the next morning. Step 9: Season with salt and sprinkle with chopped green onions. Step 10: Prepare a dipping sauce by adding chili oil, ham sauce, light soy sauce, chopped green onions, crushed peanuts, and fragrant vinegar. Mix well and dip the pig’s trotter into it. The soft and glutinous pig’s trotter pairs wonderfully with the spicy dipping sauce!
