Ingredients for Sichuan Spicy and Sour Rice Noodle: Junlian rice noodles 600g, dried chili powder to taste, broth 220ml, minced meat 100g, one large head cabbage, peanuts 150g, a few celery stalks, green onions to taste, salt, light soy sauce, vinegar, chicken essence, Sichuan peppercorn oil to taste.
Method: Step 1: First, fry the peanuts. Clean the peanuts and put them in cold oil, ensuring there is enough to cover the peanuts. The quantity of peanuts should be based on the number of people.
Step 2: Turn on medium heat and stir occasionally with a slotted spoon. Once the oil is hot and the peanuts start to feel fried, reduce the heat and fry slowly, stirring to prevent burning. Continue until the peanuts are popped and have a bright color, then remove them with a slotted spoon.
Step 3: When buying large head cabbage, it’s best to buy whole ones and cut them yourself, not too finely, to enjoy the hearty texture. Clean and squeeze out the water, ensuring it is thoroughly drained.
Step 4: Fry the cabbage in a dry pan without oil until it is dry, then remove it from the pan.
Step 5: Fry the minced meat and ginger until fragrant.
Step 6: After frying, add the cabbage and fry together, adding a little light soy sauce, cooking wine, and chicken essence, without salt.
Step 7: Cut the celery into larger pieces.
Step 8: Mix minced garlic, celery, light soy sauce, salt, Sichuan peppercorn oil, vinegar, and chili oil to taste, and add half a bowl of broth. After blanching the rice noodles, place them in a bowl, then add chopped green onions, cabbage, and peanuts. A refreshing bowl of spicy and sour rice noodles is ready!
Cooking Tips for Sichuan Spicy and Sour Rice Noodle: 1. Use the oil from frying peanuts to fry chili oil, and add sesame seeds for an extra aroma. 2. Add large head cabbage, minced meat, and peanuts at the end, do not soak them in the soup beforehand. 3. Soak the rice noodles in boiling water beforehand, and blanch them in boiling water before serving, do not overcook. 4. If peanuts are not available, soybeans can be used as a substitute.
