Method for making Sichuan Spicy Wontons: Step 1: Purchase tender front shoulder meat or plum head meat. If time allows, mince the meat yourself for a more aromatic result. I used a meat grinder. Clean the meat, cut it into small pieces, and put it into the meat grinder. Also, add finely chopped green onions and ginger. Do not over-grind the meat; it should not be too fine. After grinding, season with salt, eggs, chicken essence, oyster sauce, and a small amount of light soy sauce. Mix well and begin wrapping. Boil the water, add the wontons, and wait for them to float for about ten seconds. Then, add the aforementioned seasonings, adjusting to your preferred taste. For those who do not like spicy food, you can add some dried shrimp to the soup base and sprinkle with salt and green onions.
